Bichot ,

the pioneering spirit

As early as 1831, Albert Bichot, a visionary and an explorer, travelled the world to introduce his great Burgundies to wine lovers. To perpetuate this PIONEERING spirit, we set out in search of new HORIZONS

Our quest was to discover exceptional TERROIRS in FRANCE that our EXPERTISE could take to new heights. This led us to Limoux in the south, a terroir that we chose for its unique diversity: four different yet complementary CLIMATES that offer subtle, well-balanced wines.

Above and beyond the HARMONY we were seeking, the innovative alliance of these terroirs holds the promise of infinite FREEDOM of expression and an always PLEASURABLE tasting experience.

We are proud to offer you our rendering of the VARIETALS that are king in Burgundy - Pinot Noir and Chardonnay – which result in wines that offer an alliance of SUBTLETY, ELEGANCE, POWER and BODY.

An exceptional

Terroir

Oceanic Terroir: ELEGANCE

Western exposure.
Heavily subjected to westerly winds, this terroir is characterized by alternating wet and dry periods that result in highly distinctive organoleptic variations. Pronounced notes of citrus fruit.

Vivacity and salinity

Upper Valley Terroir: SUBTILITY

The hills in the southern part of Limoux have an average altitude of 380 m. This, along with precipitation arriving from the west, makes it the coolest and therefore the latest-ripening terroir with low yields. This area produces fresh, mineral wines that are ideal for cellaring.

Harmony, concentration, roundness and acidity

Mediterranean terroir: POWER

Facing the Mediterranean.
Protected from westerly winds yet subjected to precipitation coming from the Mediterranean Sea, this terroir is characterized by a hot climate. The often high levels of ambient humidity encourage rapid development of sugars during the ripening phase of the grapes.
This terroir produces fleshy wines.

Richness and intensity

Autan terroir: GENEROSITY

Surrounding Limoux, this terroir is more continental, protected from westerly winds and partially from easterly winds by the Malepère mountains. It is characterized by a hot climate that promotes early ripening of the grapes. The soil yields wines that are rich and unctuous, with subtle notes of butter for the Chardonnays.

Fullness and opulence on the palate

Pinot noir

Seeking out wines with dense fruitiness as well as structure to allow for longer ageing periods led us to the Upper Valley terroirs for the finesse and freshness of their grapes, which are complemented by grapes from the Mediterranean and Autan terroirs for added intensity and body.

Chardonnay

The Chardonnay grapes thrive in these four different climates; it all depends on the subtlety and balance of the grapes we select within each terroir to craft wines that are complex, mineral and rich.
